Black Bean Chili Dinner

One of my favourite things to do in the RV is cook new meals. Especially, delicious, and healthy ones. Living in an RV doesn't mean that you must live off of hotdogs over a campfire like you did as a kid. It means you can adjust your recipes to suit smaller appliances.



Last night, I decided to try out one of those dinners in a bag. Black Bean Chili! Basically, all you need to do, is add ground beef (or turkey), water, and a small can of tomato paste.



We like our foods a bit more hearty, so I added in some mushrooms, celery,many a small amount of purple onion as well.



After cooking the ground beef, which I seasoned (the recipe only calls to cook it and salt to taste), I set it aside then sauté the fresh veggies, after which, I added the water, the package, and the ground beef.




Then, after bringing to a boil, I turned the burner down low and simmered for a couple hours. The recipe wanted me to boil it for 30 minutes, but I really don't think that is going to bring out the flavour as well.



Results? A nice, thick, and very tasty Chili! We will certainly have to buy more of these dinners. They store easy, and being dehydrated, they stored for a very long time. I've had this bag for a couple years, and just kept forgetting about.

As an extra note on it being dehydrated, it all fluffed up and tasted just like it had when it was fresh!

I highly recommend these dinners.
